Watch out Pizza Hut!!!

This event comes down to one word "Pizza-tacular." There were lots of good friends and lots of good food. We also welcomed several new members including Karlheinz and Amandalyn.

Pam made her BBQ Ranch Chicken pizza, which was attacked faster than a hungry TRex at an orphans' Thanksgiving--there were no surviving BBQ chicken pizzas.

Kevin's mushroom pizza (a luscious medley of portabella and white-top shitake) and good-for-you spinach pizza were also a hit.

After munching on a variety appetizers and pizza, Kevin lit the bonfire and the S'Mores fest was underway (thank you Jerry!).

As the night wound down, folks were thinking of heading home until most everyone realized that it was only 5 minutes until the start time for FAMILY GUY!!

We're glad everyone could come out and join us for such a fun evening. Thanks to those who helped out with the cleanup. Special thanks to Kevin for hosting!

BBQ RANCH CHICKEN PIZZA
From the Bay's English Muffin Website

- 4 Bays English Muffins, split and lightly toasted
- 2 cups precooked chopped chunk chicken, divided (purchase at ChickenOut to save time)
- 1 cup barbeque sauce (divided)
- 1/2 cup diced red onion
- 1/2 cup prepared ranch dressing
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped fresh cilantro leaves

Preheat oven to 400°F. In a medium bowl, combine the chicken with ½ cup of the barbeque sauce; mix until combined and set aside. Place the lightly toasted muffins on an ungreased baking sheet. Spread the remaining barbeque sauce over each muffin. Spoon chicken mixture and red onions over sauce. Drizzle ranch dressing over chicken then top with mozzarella cheese. Bake for 10 minutes or until muffin edges start to turn golden brown and cheese is hot and bubbly. Remove from oven and top with cilantro leaves.

Serves 4-6

Wow, those pizzas looked great! (Rest In Peace, lol) What a great event idea; I think I may try to make some of those for myself. And Kevin, can I get the recipe for the 'shroom and spinach pizza even though I wasn't there? Pizza-tastic indeed. :)

I want to thank everyone that came, Ill give the recipe for anyone that asks for the Mushroom or Spinach pizza, Some of you have and i have yet to get back to you, my apologizes. However, the next event Im looking at hosting (Repeat? and a 3 days of events in a row) will prob happen Second weekend in Feb.
